A former Lurcat sous chef, Chef Fabio returns to the restaurant from his most recent role as a sous chef at The Continental. He joined the D’Amico & Partners full-service restaurant team in 2014 as a line cook at the former Masa and quickly worked his way up to sous chef there. His background also includes kitchen roles at Marco Prime, where he was part of the opening team, and Shula’s. Originally from Santiago de Cali, Colombia, Chef Fabio was a member of the country’s Deportivo Cali semi-pro soccer team. His passion for food and cooking emerged when his family moved to the U.S. in 2001. Eagar to learn and driven to achieve like a true pro, he set out on his mission to tackle this new career goal by tending bar to pay for his Miami Culinary Institute culinary arts degree.
